About Chef Efrat

My journey with sourdough began in 2019.

Like many people during that time, I found myself spending more time at home and started baking as a way to slow down and create something with my hands. When I made my first sourdough bread, I immediately fell in love with the process.

Watching flour, water, and time transform into something alive felt almost magical.

The flavor and texture were unlike anything I had ever experienced from store bought bread. What started as curiosity quickly turned into a passion for natural fermentation and artisan baking.

But in 2022, my relationship with food changed in a much deeper way.

That year I was diagnosed with breast cancer. It was a life changing moment for me and my family, and it forced me to take a closer look at many aspects of my life, especially the food I was eating.

As part of my healing journey, I began working with doctors and naturopathic specialists to focus on simpler, cleaner ingredients. Many processed foods were removed from my diet, including products with added sugar, dairy, and highly refined ingredients.

As someone who has always loved bread, that change felt incredibly difficult.

But sourdough gave me a path forward.

Traditional sourdough relies on natural fermentation and simple ingredients such as flour, water, and time. There are no preservatives, artificial additives, or unnecessary ingredients. It allowed me to continue enjoying bread in a way that felt wholesome and nourishing.

As I continued baking, I began experimenting with more sourdough recipes including classic loaves, focaccia, pizza dough, crackers, and other creations made from the same living starter.

Friends and family started asking for bread. Soon after, they began asking something even more meaningful.

"Can you teach me how to make this?"

Sharing sourdough with others quickly became one of the most rewarding parts of my journey. Teaching people how to create something simple and beautiful in their own kitchens brought me incredible joy.

That passion eventually grew into workshops and, over time, into ERNEY.

Today, through ERNEY, I help home bakers everywhere activate their own starter and experience the joy of baking real sourdough bread at home.

Sourdough is more than just bread.

It is patience.

It is simplicity.

It is the beauty of letting something grow naturally.
