How to simply activate ERNEY
What you need: A jar, flour, water, and a few minutes a day. No special tools.
How long it takes: Many bakers see activity in a few days and bake within the first week. Cooler kitchens can take longer, and that’s normal.

Starter FAQs + troubleshooting
How long does activation take?
Many bakers see bubbles and growth in a few days and bake within the first week. If your kitchen runs cool, it may take longer. That's normal. Warmth and consistency matter more than speed.
My starter isn't bubbling yet. Did it fail?
Not usually. Try these three fixes first:
- Warm it up: place it in a slightly warmer spot (not hot).
- Use filtered water: chlorine can slow activity.
- Stay consistent: feed on schedule for 2–3 more days before you judge it.
It smells weird. Is that normal?
A tangy, sour aroma is normal. If it smells sharply unpleasant or you see fuzzy mold, stop and restart. If it's just "strong," keep feeding and it typically balances out.
When can I bake my first loaf?
Bake when your starter is reliably active after feeding (bubbles + visible rise). Many first loaves happen within the first week once activity becomes consistent.
Do I have to feed it every day forever?
No. Once it’s established, you can keep it on the counter if you bake often, or store it in the fridge if you bake occasionally. The key is feeding it on a routine that matches your schedule.
